A larger surface area means digestive enzymes can break down the fats more efficiently in the next stage of digestion.Pancreatic lipase is released from the pancreas to digest fats at the surface of emulsified fat droplets.Colipase, a helper protein, assists lipase in binding to the fat droplet surface.Together, lipase and colipase form a complex that can effectively bind to the fat droplet surface.The lipase-colipase complexes move to the water-lipid interface where they can access the triglycerides.Lipase breaks down triglycerides, which consist of three fatty acids attached to a glycerol backbone.The enzyme breaks the bonds between fatty acids and glycerol, producing two free fatty acids and one monoglyceride.This process continues as lipase enzymes break down more triglycerides at the droplet surface.The broken down fat components combine with bile salts to form specialized structures called micelles.These micelles act like tiny shuttles, carrying fat components through the watery intestinal environment to reach the intestinal cells.At the intestinal cell surface, the fat components are absorbed while the bile salts return to pick up more fats.Inside the intestinal cells, the fat components are reassembled into triglycerides and packaged into larger particles called chylomicrons.These chylomicrons then enter the lymphatic system, which will distribute the absorbed fats throughout the body.
